Creamy cheesecake with fruity apricot – light, fresh and perfect as an Easter dessert.

Ingredients

für 6 Portionen

  • 70 g = 8 sponge fingers
  • 50 g melted butter
  • a dash of lemon juice
  • 200 g cream cheese
  • 150 g low-fat quark
  • 150 g mascarpone
  • 1 tbsp vanilla sugar
  • 6 apricots (e.g. tinned)
  • 2 tbsp chopped pistachios

Preparation

Crush the sponge fingers in a bowl and mix with the melted butter. Then divide the mixture between 6 glasses and press firmly into the base.

Finely dice 6 apricot halves, mix with the lemon juice and pistachios, then spread the mixture over the biscuit base in each glass.

Mix the quark, mascarpone, cream cheese and vanilla sugar into a smooth mixture and divide this between the glasses as well.

Finally, place half an apricot on top of each glass as a decoration, and it looks just like a fried egg for Easter.
