Ingredients

  • 750 g couscous
  • 600 ml orange juice
  • 2 diced onions, fried
  • 2 small zucchinis
  • diced and fried
  • 3 red bell peppers
  • cubed and fried
  • 25 soft figs or dates
  • diced, 10 tbsp. honey
  • 25 g coriander
  • 3 tbsp. salt
  • black pepper
  • freshly ground
  • 1,5 tsp. cumin seeds
  • 3 tsp. curry powder
  • 3 tsp. garam masala
  • 3 tsp. turmeric
  • approx. 125 ml olive oil

Preparation

Prepare couscous according to instructions, but replace half of the required water with orange juice. Once the couscous grains have swollen, leave them to cool in a large bowl and use a fork to break them up. Mix the cubed and fried vegetables with the honey and rest of the spices and season to taste. Add the dates and figs. Let cool down and then add it to the couscous. Add the olive oil and mix everything together. Ideal as a vegetarian meal combined with grilled vegetables.
