Ingredients

  • 1 cucumber
  • 1 small spring onion
  • 2 tbsp fresh ginger
  • 10 g fresh mint
  • juice of 1 lime
  • 400 g yoghurt
  • 1 tsp sea salt
  • 2 pinches of pepper freshly ground
  • 50 ml olive oil
  • 2 tbsp cane sugar
  • 2 tbsp pine nuts
  • 1/2 tbsp lovage seeds

Preparation

Wash and peel the cucumber cutting off the most watery parts. Cut the remaining part into small chunks and place in a bowl with the diced onion and yoghurt. Grind ginger, lovage seeds, mint, lime jice, salt pepper, oil and sugar to make a paste. Add the paste to the bowl and mix with the cucumber. Serve in the jar as a dip for fresh bread or grilled meat.
