Spicy mango chutney

Ingredients

  • 2-3 mangos
  • juice of 2 limes
  • 3 tbsp. of maharani spice blend
  • 2 chilli peppers
  • 4-6 cardamom seeds
  • ground
  • 1 tbsp. of fresh ginger
  • 1 tbsp. of garlic
  • 100 ml tomato juice
  • 100 ml pineapple juice
  • 100 g passion fruit juice
  • 150 g sugar
  • 5 tbsp. of olive oil
  • 2 tsp. of sea salt
  • 1 tbsp. of sweet paprika
  • black pepper, freshly ground

Preparation

Lightly caramelise the sugar in a pan with the olive oil for around one minute stirring it continuously. Add the remaining ingredients to the pan and let simmer for 5 minutes. Finally purée to the desired consistency with a hand blender. Then season to taste. Pour into a jar and serve warm or cold.
