Ingredients

  • 1,2 kg fresh strawberries
  • 45 g sugar
  • juice of a lime
  • 120 ml passion fruit juice
  • 1/2 tsp of pink pepper
  • 1/2 tsp pickled fresh green pepper
  • 150 to 200 g vanilla ice cream
  • fresh mint

Preparation

Wash and cut the strawberries into quarters, then place them in a bowl. Caramelise the sugar in a pan until light brown. Add the lime and passion fruit juice to the pan and stirring contiuously let reduce to a smooth sauce. Pour the strawberries into the pan, season the mixture with both the peppers and stir without heat for 30 seconds. Add 1 scoop of vanilla ice cream to each clip-top jar with 3 to 4 tbsp of pepper and strawberry sauce. Garnish with mint leaves and serve immediately.
